Nothing is more comforting than a good bowl of soup in this rainy, cold winter days. Today I am sharing my mom’s soup recipe of this simple, delicious yet nutritious food.
In Chinese, it’s called Luo Song Tang 罗宋汤, the type of soup is originally from Russia, however, after decades of changing and evolving with the Chinese cuisine, this soup has become a very typical dish from Shanghai.
As usual, we will need to do some groceries, following ingredients are enough for 6-8 persons:
6 big tomatoes,
2 red onions,
3 big potatoes (stragy type),
375 gram smoked sausage,
Cut onions and potatoes into slices, doesn’t have to be very thin. Then cut the tomatoes into quarter, and slice the whole cabbage in about 2cm slices. Chop the sausage thinly.
First of all, you will need a very BIG pan for all these ingredients. Heat up the pan, fry onions and tomatoes together for about 5 minutes, until the juice come out, add 1 teaspoon of salt, stir-fry for another 2 minutes. Put the potatoes in, fry for about 3 minutes, then add the sausage. Stir all ingredients well for about 5 minutes, add hot water, water should be completely covering the content. Wait until the soup is boiling, add 2 table spoons of ketchup, if you like the soup to be a bit sour, you can increase the amount of ketchup, but my suggestion would be done not add more than 5 table spoons of ketchup, otherwise the taste is very artificial. Stir well, now you can add the cabbage, make sure to stir well. Wait until the soup is boiling again, then leave it on small fire for about 20 minutes, add some freshly ground pepper and ½ teaspoon of salt. Wait for another 10 minutes. Voila! The soup is done!
Super simple yet very delicious soup done within 1 hour.
